You see the theme and your count when you log in, and a progress line every 100 kills. Hunting Coins go through the weekly cap; what it holds back is paid at a later login.
Which kills count
A kill counts when the monster is the month's kind and its level is at least your base level −30, or at least the month's floor level, so high levels always have monsters to hunt. Event monsters (World Boss, invasions, rifts) never count.

Questions
When does a season start and end?
On the 1st of every month at 00:00 server time (CET) a new season starts and every character's count starts again from 0.
Which kills count?
Monsters of the month's kind (a race or an element) whose level is at least your base level minus 30, or at least the month's floor level. Event monsters (World Boss, invasions, rifts) never count.
Do kills count for my party?
Each character counts its own kills: in a party, the kill counts for the player who lands it.
What if the weekly Hunting Coin cap is full?
The coins the cap holds back are not lost: they are paid at a later login, once the weekly cap has room again (it resets on Monday 00:00 server time, CET).
Do I get the Season Hunter title every month?
The title comes once, the first time you reach 5,000 kills in a month. The Hunting Coins are paid every month.
